Coffee Beans

The coffee plant, or coffee tree, belongs to the Coffea genus and is a member of the Rubiaceae family . They are shrubs that can reach 20 meters in height in the wild, depending on the variety. However, to facilitate harvesting, they are pruned to a height of 2–4 meters on plantations.

The fruit of the coffee plant is a cherry, or  drupe , and resembles a small cherry. It is green when first born, and over the next 8-11 months (depending on the species, growing area, and ripening stage), it changes color from yellow to red. Inside each drupe are two seeds separated by a groove and surrounded by a yellow pulp called the seed coat or parchment. These seeds are the coffee beans.

  • The Arabica bean : silky, fruity, and with hints of cocoa . Originally from Ethiopia, it is the most widely consumed and widely consumed coffee in the world. It has a caffeine concentration of around 1.5%.
  • Robusta seed : It is stronger and more bitter, with hints of nuts and wood. It also contains more caffeine: between 2-3%.
